Magical Grapes with Chef Virgilio Martinez is back for the fifth consecutive season. For this Delight that feels fundamental to Rose, we worked with Seiji and Chiho Morimoto of Magical Grapes Farm to showcase their picture-perfect Shinano Smiles. Native to Japan, this precious “gifting” grape is prized for its fragrant juiciness and challenging cultivation. Here in California, Seiji and Chiho grow their garnet-colored, transparent Shinanos in individually wrapped bunches on custom trellises to maintain their shape and immaculate appearance. We collaborated with Chef Virgilio to highlight the grapes’ sweet, grassy flavor with hand-muddled ginger and pink pepper, and honor Seiji and Chiho’s tireless dedication to this fickle fruit.
